24 hours and 6 stars in Copenhagen – Geranium and Kadeau

Copenhagen’s top restaurants have not so convenient schedules, so given that we really only had one day when they were going to be open, I took my family on a 6 star tour in a day, lunch at Geranium and Dinner at Kadeau. Was it a bit crazy and my sister was about to kill me – yes? was it fabulous and I’m glad I tried both – also of course yes. Here are my thoughts on both. Was there a favorite between the two – I think there was, I think for the whole family Kadeau came out on top, but both were amazing experiences.

Kadeau

The vibe is rustic and quite chill for a 3 star michelin and I really enjoyed that. A simple but beautiful dining room and an open plan kitchen that lets you see all that is going on. So here’s what we ate with all the pictures- they dont give you a menu beforehand, just after so you basically are riding blind as to the number of courses and what you are going to get, but we werent dissapointed. Also the menu is gorgeous and I put a picture at the end!

clams and vegetables

cured squid, new potatoes and magnolia – perfect little bites, the squid was so perfectly cooked

mackerel tart – pure art on a plate and I actually really enjoyed the mackerel here which is not one of my favorites

tomatoes with aromatic herbs – so simple but so tasty and beautiful

raw shrimps, pumpkin seeds, caviar, roses – This might be one of the prettiest dishes ive ever been served. Plus side it was absolutely delicious too. The pumpkin seeds were half raw and half toasted (i did prefer the toasted though) and the blend of flavors was divine

sandwich of leaves – My dad made a vert deceptive comment as to why are we eating just lettuce. He was wrong this was a very solid dish of just lettuce!

hot and cold smoked salmon with lavender – I mean i knew the salmon was going to be great here but this just blew me away. The tastiest smoked salmon I’ve probably had.

raw scallop with young onions and hazelnuts

brown crab, celeriac and sloe blossom – this was also another one of it looks so good it probably will not taste great but no, its delicious.

langoustine tail, claws and head – By far the best dish of the night and maybe one of the tastiest things ive had. Granted I love me a langoustine but this is absolute perfect preparation. It is also super simple but wow.

raw and grilled lamb with preserves – I forgot to take a pic! but it was delicious but by this point I already have had my fill and was so full

chewy fruits and conifers – i have to say this was more creative than delicious, it was alright but I did not need to have it again

mirabelles – Ok this looks deceptive and very simple. But man was it tasty. Its a mix of ice cream, custard, fruit and fabulousness and so good. It will not win beauty points but it did win all the taste ones.

warm walnut pie – one thing we learnt is that they like their pie int his city, and even after multiple courses and two dessert they brought a medium pie to the table. I didn’t have any as it had gluten but the rest of the table loved it, but it was a lot of food by then – again such food comma that not even a picture of the cute pie.

Geranium

The ambience in Geranium is quite different. Less rustic more clean astethic and very floral. White and beautiful flower touches. The location is hilarious, its atop of the football stadium and in the tour of the kitchens you can see into the stadium. Not really the place where you think to find a 3 michelin star but then again all the restaurants in this city are weirdly located. THe food was fresh and light, which was good given the ammount of food we were going to injest all day. I think the was morea acolelction of the story, there were less dishes that stood out individually but all as a whole made for an absolutely delightful meal .Heres what we ate:

Appetizers

  • Oysters & razor clam in crispy algae, parsley & akvavit – How gorgeous is this first dish
  • Lightly smoked bleak roe, milk & kale
  • Creamy egg yolk, tarragon, liquid cheese & potatoes
  • Oscietra “Gold” Caviar, waffle with potato & beech nut, sour cream with pickled walnut leaves
  • “Today’s green harvest” with yeast flakes & horseradish

Savoury Servings

  • Raw mackerel, cucumber & tomato water with vanilla & fig oil
  • Langoustine “Ryge ost”, pickled elderflowers & aromatic leaves – A langoustine lettuce taco is the healthy route i need to go for the rest of my life – can someone make this on the daily for me
  • Marbled hake, charcoal oil & caviar – this was sooooo pretty and sooo delicious – the ammount of effort it takes to make that marbeling
  • “Demeter”
  • “Soup” from white asparagus with asparagus beer & truffle
  • Scallops with beach plants & peas in fermented cabbage juice

Sweets

  • Sour cream, maytree flower infusion & citrus herbs
  • Chamomile, dried green strawberry & buttermilk – These flavours were 100% me and the flower art was just spectacular
  • A world of chocolate, Jerusalem artichoke, prunes & grain coffee – i was not a fan of this dessert, too many chocolate options, when i was already too full and dont really love chocolate that much. I would have liked less desserts in general.
  • Tart with sunflower seeds & rhubarbs marinated in sloe berry juice – as I said above they love their tarts, and they definitely were not needed but still were eaten!
